Recipe for Tomato Tart
 

Make ahead note:

The tart can be made in part or totally ahead. It can be served hot or at room temperature.

Ingredients:

  • 2 sheets frozen puff paste, defrosted
  • 6 medium tomatoes – about 1 lb
  • 3 cloves of garlic finely chopped
  • 3 shallots finely chopped
  • 16 basil leaves shredded
  • 2 Tbl extra virgin oil
  • Salt and pepper to taste

Preheat oven to 400 degrees. Roll out puff paste into larger rectangles. Sprinkle with garlic, shallots and basil. Slice the tomatoes as thinly as possible. Place tomato slices over the puff paste, over lapping a bit. Go to the edges of the pastry with the tomatoes. Give a few twists of salt and pepper and drizzle on the olive oil.

Bake until puffed and golden, about 15 to 20 minutes. Slice each rectangle into eighths and serve.
