Recipe for Grean Beans with Coriander
 

Make ahead note:

These beans are best if made the day ahead so that the coriander and garlic flavors can marinate the beans. Just before serving you can toss with the lemon juice, vinegar and remaining oil.

Ingredients:

  • 2 Lbs green beans with the stem end removed
  • 2 cloves garlic, minced
  • 2/3 cup coarsely chopped coriander
  • 6 Tbl extra virgin olive oil
  • 1 Tbl fresh lemon juice
  • 3-4 Tbl cider vinegar
  • Freshly ground pepper and salt to taste

Bring a large pot of water to boil. Add a teaspoon of salt and the beans. Reduce heat so that it is a moderate boil and cook until the beans are tender - about 10 minutes. Drain and dry off the excess moisture with a paper towel.

While the beans are cooking prepare the coriander and garlic. Place them in a large serving bowl. Place the beans on top of the herbs and let sit for about 10 minutes. Toss with about 5 Tbl of oil. Allow to marinate at least 3-4 hours but overnight is better.

Before serving add the lemon juice, 3 Tbl of vinegar, salt and pepper. Adjust seasonings as necessary including tossing with the remaining oil. Serve.
